Ingredients
- 1 pound mini sweet peppers, whole
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- Salt and black pepper to taste
Directions
- Preheat oven to 375°F.
- Wash the mini sweet peppers and pat them dry.
- Place the mini sweet peppers in a mixing bowl. Drizzle with olive oil, basil, garlic, salt, and pepper and toss to coat the peppers evenly.
- Arrange the seasoned mini sweet peppers on a baking sheet, Roast the peppers in the preheated oven for about 20-25 minutes or until they are tender and slightly caramelized.
**Optional: Garnish with fresh chopped Italian parsley and/or grated parmesan cheese**
